Dom Pérignon 2015 is produced from the best Pinot Noir and Chardonnay grapes, ripened during a single year and harvested towards the end of September. The wine is vinified using the Méthode Classique, with refermentation in the bottle. The wine is then aged on its lees for at least 8 years, until such time as the Cellar Master deems appropriate.
The nose is fine and complex. The bouquet reveals notes of eucalyptus, mint and vetiver, accompanied by fruity aromas of mirabelle plum, apricot and orange blossom, finishing with notes of pepper, cardamom and liquorice, as well as hints of iodine and toast. The sip is elegant, clean and precise. At first sight, it is enveloping and ethereal, then amplifies into a fine, silky texture. The finish is salty and sapid, with a very harmonious taste.
