Emma Walker, Chai Master at Johnnie Walker, and celebrity chef Kei Kobayashi have joined forces to decode one of the world's most enigmatic tastes: Umami.
Based on the Johnnie Walker Blue Label, Elusive Umami is an innovation that pushes the boundaries with a balance of sweet and savoury flavours, combined with notes of blood orange and red fruit, a delicate touch of wood, a hint of smoked meat, a pinch of salt and a long, sweet, fruity finish.
Casks from inland and coastal distilleries are selected one by one at the peak of their maturation for their unique Umami flavour. This Japanese term is used to identify the 'fifth taste'; Umami is an enigmatic flavour that possesses mysterious virtues. Ultimately, just one cask out of 25,000 manages to convey the elusive character of Umami, and the result is a pure feast for the senses.
