It has become a much sought-after benchmark in the Burgundy landscape. Thibault Liger Bel Air took over the family estate in 2001. The vines are grown organically and biodynamically. In the vat room, fermentation and ageing are ultra-mastered, with nothing escaping his attention.
The word Créot means chalk, which makes it easy to understand the type of soil. From vines planted between 1950 and 1958, the grapes are harvested by hand and vinified without whole bunches, as this limestone terroir is self-sufficient. The wines are then matured in 40 % new oak barrels for 20 months. On the nose, the wine is open with notes of smoke, spice, black fruit and kirsch, with a hint of liquorice. The palate is racy and powerful, with notes of thyme and cedar and tannins that are still a little dry. This is a wine that needs to be aerated and deserves to be cellared for at least five years. It goes perfectly with venison or a fine veal chop.
