 Bruichladdich Organic Barley 2011

"Bruichladdich Islay Barley 2011 is an 11 year old unpeated whisky created to show the effects that soil, climate, geographical orientation and natural influences can have on a whisky's profile. Distilled from barley grown on six farms in the west and centre of Islay, this whisky offers warm, smooth flavours. It has been aged mainly in old first-fill Bourbon casks.

This single malt has a refreshingly saline quality that blends aromas of apple, redcurrant, vanilla and citrus.
On the palate, there's elderflower, honeysuckle and sweet barley.

Mid Coul farm :

Mid Coul Farm, near Inverness in the north of Scotland, produced the first crop of organic barley in 2003. Covering 1,300 hectares, this innovative farm opted for a closed-loop growing system that generates electricity using a methaniser (an anaerobic digester) and recycles virtually all its waste in the form of fertiliser.

Naturally fertilised barley, with no artificial inputs, is the purest possible expression of its terroir: the soil, climate and place that gave it birth.

This sustainable mindset, based on harmony with nature, is the future of whisky, and an important part of the exploration of different barley varieties. This subtle, floral whisky is aged in American oak casks, which give it its wonderful creamy flavours of vanilla and butterscotch, combined with notes of honey and citrus, ripe fruit and delicate spices.

WHAT IS AN ORGANIC WHISKY?

A product can only be certified as organic once the entire production process has been checked and approved. The Bruichladdich distillery undergoes this process every year with the Biodynamic Association. It covers everything from the selection of the farms where the barley is grown, to the logistics involved in transporting it. Before fermentation and distillation, the distillery is thoroughly washed with water. The barrels and bottling operations are also inspected.

The Bruichladdich distillery produces unpeated whisky under its own name, very peated whisky under the Port Charlotte name and extremely peated whisky under the Port Charlotte name. Octomore.
